In Texture Editor, change "Base Color" under Shader Color heading in left side column. See second photo for example of how to this is accomplished. Use with "Long Coat (Stand Up Collar)". Recommend to start with following values: Collar Sag 50, Collar Hem Tightness 75, Collar Tightness 100, Collar Higher 45. Then adjust values to fit your model's face.
